Fish tacos
Ingredients:
- 10 crunchy frozen breaded fish fillets
- 1⁄2 small jalapeño
- 1 (20 oz.) can pineapple tidbits in juice (drained)
- 1⁄4 cup thinly sliced red onion
- 1 tsp. grated lime zest
- 2 Tbs. lime juice
- 1⁄4 tsp. salt
- 10 crisp taco shells
- 6 cups shredded romaine
- 1⁄4 sour cream
Bake fish according to package directions. In a bowl, combine the next 6 ingredients. Fill each taco shell with lettuce and fish. Top each with 1 Tbs. pineapple mixture and 1 tsp. sour cream.
